Those headlight switches are a bit tricky at first but once you figure out how to do it, it is a snap. No, not all of them had a strobe. It was an optional thing. Looks like yours had the V21 which in 71, if I'm thinking right, would have been the pinstripes in the recessed areas of the call outs on a standard RR hood and looks like no strobe code there so it probably didn't have one originally.

"Folding center armrest" was an option, yes. Typically referred to as a "buddy seat".
I bought Legendary covers for my 72 and I compared to the originals (which weren't in terrible shape) and they are close. Any differences aren't very noticeable if there are any.

I think it's all the same as far as the seats go. You could get the same seats in any of the different models. Differences depend only on the option code and model year of the car as far as I've seen.
